the United States is indeed facing its smallest domestic cattle herd in decades—which is driving grocery prices to record highs.

American consumers have a massive appetite for ground beef. To satisfy this, the U.S. mostly imports lean trimmings from countries like Australia and Brazil to blend into hamburger meat.

International markets, especially in Asia, prize premium U.S. grain-fed steaks, as well as variety meats and offal (like tongues and intestines). These items fetch much higher prices abroad than they ever would in American grocery stores. Exporting these specific cuts maximizes profits for U.S. producers, even when total domestic meat supply is tight.

Over the last few decades, the U.S. meatpacking industry has transformed from a network of small, local slaughterhouses into a massive corporate monopoly. This hyper-efficient but highly fragile setup creates a severe "hourglass" economic bottleneck where millions of cattle and millions of consumers must pass through just a handful of processing facilities.

The biggest reason for the bottleneck is that four giant multinational corporations control 85% of all beef processing in the United States. 

Because permissive antitrust policies since the 1980s allowed these companies to buy up almost all of their smaller competitors, there are very few independent processing plants left.

To maximize corporate profits, these four giants shut down regional plants and built mega-facilities capable of processing over one million cattle per year.

Meatpacking is notoriously grueling, dangerous, and relatively low-wage work. Packing plants are often located in remote, rural areas with sparse populations. Finding and retaining workers to keep these massive production lines moving at top speed is a constant struggle. When a plant is understaffed, management has no choice but to slow down the slaughter line, triggering a backlog of cattle.
